
Luxury hospitality brand Fairmont Hotels & Resorts is preparing to open its first property in Northwest England following the £125m transformation of The Mere estate in Cheshire.
The new resort, Fairmont Cheshire, The Mere, is scheduled to open on 10 July 2026, with reservations now live. The property will become Fairmont’s fourth hotel in the UK, joining The Savoy, Fairmont Windsor Park, and Fairmont St Andrews.
Set within 157 acres overlooking The Mere Lake, the estate has undergone a major redevelopment by Select Group, the UAE-based real estate investment and development company. Interiors for the project were designed by London-based Bergman Design House. The project followed a £35m acquisition and a further £90m investment to convert the estate into a luxury countryside resort.

The opening marks a new phase for The Mere, a site with a history dating back to its mention in the Domesday Book of 1086. Over time, the estate operated as a leisure destination and private club before returning to hotel use under the Fairmont brand.
Lakeside estate to include dining, wellness, and golf facilities
The resort will include 116 guestrooms and suites, alongside dining venues, spa and golf facilities, and event spaces arranged across the lakeside estate.

Gordon Ramsay at The Mere will be the resort’s signature restaurant, focusing on British cuisine. Other dining spaces include The Orangery, which will offer afternoon tea during the day before transitioning into a Champagne and oyster bar in the evening, and The Club Lounge, which will serve British and Indian dishes.

The resort will also include a spa and wellness complex with a 20-metre pool, vitality pool, sauna, steam rooms, salt inhalation chamber, and a Rasūl Room designed for mineral mud and steam treatments.

The estate’s existing 18-hole championship golf course will also form part of the resort.
Claudia Kozma Kaplan, Chief Brand Officer at Fairmont Hotels & Resorts, said the property had been designed as a countryside retreat centred around wellbeing, dining, and leisure experiences within a rural setting.
Historic estate to operate as an events and hospitality destination
The resort will also host conferences, weddings, and large-scale events. It will include a 1,000m² ballroom with a capacity of up to 1,000 guests, alongside four boardrooms overlooking the surrounding landscape for meetings and private dining.

According to Select Group, the project was intended to establish a new luxury hospitality destination in the North West of England through its partnership with Fairmont Hotels & Resorts, which is part of the global hospitality group Accor.
Located about 10 minutes from Manchester International Airport and approximately 30 minutes from Manchester city centre, the resort will welcome both leisure travellers and event guests following its July opening.
